Japanese<\/a> cheesecake (a.k.a. Japanese cotton cheesecake, bouncy cheesecake, souffle cheesecake, souffle castella<\/a> or jiggly castella) is a variation of cheesecake that originated in Japan in the 1980s. \u00a0Its texture is soft & fluffy, much more like a sponge cake than a rich &\u00a0creamy<\/a>\u00a0American cheesecake.\u00a0 It is made with a combination of cream cheese, eggs, sugar, and cornstarch, and is often flavored with vanilla or lemon juice. <\/p>\n\n\n
